Inspired by the incredible salmon and goat cheese pizza I tried at Resto-Pub Q-de-Sac in Quebec City and my love for classic lobster rolls, I set out to create a pizza that blends these delicious flavors. Using fresh lobster and high-quality ingredients, I made a pizza that’s luxurious yet easy to prepare. And the best part? The creamy, homemade lobster cheese sauce made with lobster shells, fresh herbs, mozzarella, and parmesan cheese. This sauce adds incredible depth to the pizza and brings all the flavors together beautifully.

LOBSTER PIZZA

Equipment

Ingredients
  

  • 1 pound pizza dough
  • 1 pound whole lobster
  • 3 lobster tails
  • 1/2 stick butter
  • 1/2 chopped red onion
  • 1 tbsp minced garlic
  • 3 chopped red chilies
  • 1 handful chopped parsley
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sliced goat cheese

Lobster Cheese Sauce

  • Lobster Shells from 1 whole lobster and 3 lobster tails
  • 2 tbsp olive oil
  • 1 Small red onion
  • 2 Garlic bulbs minced
  • 1 cup white wine
  • 1 tbsp paprika
  • 1 tbsp old bay
  • Salt and black pepper
  • 1 stick butter
  • 1 cup cooking cream
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese

Instructions
 

Preparing the Lobster

  • Separate the lobster meat from the shells. Set the meat aside for the pizza and reserve the shells for the sauce.

Lobster cheese Sauce

  • Heat 2 tablespoons of olive oil in a pan over medium heat. Add half of the chopped onion and garlic, cooking until translucent.
  • Add the lobster shells to the pan, and cook on high heat. Crush the shells as they cook to release maximum flavor.
  • Deglaze the pan with white wine, letting the alcohol cook off and the wine reduce for 2–3 minutes. Add 1/2 cup of water, Old Bay seasoning, paprika, salt, and black pepper. Let this simmer for 3 more minutes.
  • Strain the mixture to remove and discard the shells, reserving the flavorful lobster sauce.
  • In the same pan, melt the butter and add the remaining onion and garlic. Cook for 1–2 minutes until softened.
  • Pour in the cooking cream and add the mozzarella. Cook, stirring, for another 2 minutes until smooth.
  • Add the lobster sauce to this creamy mixture, stirring to combine. Cook for 1 more minute, then add the parmesan cheese. Stir well, then remove the pan from heat and set the sauce aside

Lobster topping

  • In a hot pan, melt butter. Add chopped onion and garlic, cooking until translucent.
  • Add parsley and chopped chilies, cooking for 2 minutes.
  • Add the reserved lobster meat and cook for 3–4 minutes (it will finish cooking in the oven). Set aside.

Assembling the Pizza

  • Preheat the oven to 425°F (215°C).
  • Roll out and stretch the pizza dough to cover a 13-inch pizza pan or cast iron skillet.
  • Drizzle 1 tablespoon of olive oil over the dough. Use a pastry brush to coat the entire surface, including the crust.
  • Use a fork to poke holes all over the center of the dough to prevent bubbling.
  • Spread the lobster cheese sauce over the pizza (avoiding the crust). Top with shredded mozzarella, the partially cooked lobster, and slices of goat cheese.
  • Bake in the preheated oven for 15-20 minutes, until the crust is golden and cheese is melted.
  • Garnish with chopped chives, slice, and serve.
